Annual Holiday Baking Party and my Spiced Oatmeal Chocolate Chip Cookie Recipe

This year’s baking party was a hit last weekend! What a tradition. It is quite a bit different with kids though, lol. Most of us had babies on our hips or strapped to us at some point of the day. My son was a decent babysitter and played (supervised of course) with the babies quite a bit. He certainly had fun. So much so, he asked when he could have a baby brother. Hmm…..”Well,son, I don’t know”. “What if you have a sister?” I asked him. Nope, “I want a brother” he responded. Explaining to a 3 1/2 year old that his daddy picks if he gets a brother or sister is hard! He finally got frustrated with me and went back to playing with the other kids. Thank goodness. I already have my husband asking me the same question. I don’t need both of my boys ganging up on me. Not their decision anyway, right? Lol.

To make our baking party go smoothly, I took a page from my friend’s book (who usually hosts ) and had everyone make the cookie dough ahead of time. This way all we have to do is bake and decorate the cookies. Preparing the mixture ahead of time saves us so much time! And dishes :). When everyone arrived, I had the oven preheated and ready to go. Of course, we chatted and passed around babies for a bit too. For the first time, I got to meet little Dylanwho is only a few months old. Such a cutie!

We had so many amazing cookies by the time we finished the baking! My house smelled absolutely amazing! There were classic sugar cookies, chocolate chip cookies stuffed with Nutella, and these oatmeal chocolate chip cookies. It is safe to say; I completely blew my healthy eating this past week. I ate my weight in thisgluten-freespiced oatmeal chocolatechip cookie recipe! That’s ok though. It’s all about balance, right? I usually do pretty well with eating healthy, so an indulgence here or there is OK by me. Life has tobe fun too ;P

Gluten Free and the Holidays

I will say it was a little different being the only gluten freeperson in the group. Of all the cookies, only my recipe was gluten-free. Not a big deal since I created the cookierecipe around my favorite flavors. Quite dangerous come to think of it since I ate so many. Oh well! Luckily, I prefer savory so I the temptation wasn’t too much, but that Nutellastuffed cookie had me thinking.

I was overjoyed when everyone wanted to take some of my cookies home too! Since no one else is gluten-free, I didn’t expect they would. But, I was mistaken. No one could even tell the gluten was missing from this gem of a recipe. You have to try this spiced oatmeal chocolate chip cookie recipe. It’s delish!

When testing this cookierecipe, I made a few bad batches. Make sure you refrigerate the dough! The first go round I took pictures of the cookiedough, and it got too warm. When I baked my cookies, they spread out like greasy blobs Yuck! My son called them my ugly cookies. They still tasted good but their appearance left much to be desired. Just trust me and refrigerate the cookie dough! Your cookies will be much prettier.

In my household, we love DIY holiday gifts. It allows you to gift a little more freely without substantial monetary investments. And everyone likes to be remembered around the holidays. We always gift cookies and baked goods to neighbors and friends to make them feel special. It also helps teach my son to be thoughtful during the holiday season.

This year we went shopping for donations for the homeless too. It was undoubtedly an enjoyable teaching moment to help explain how fortunate we are and how important it is to helpothers who are less fortunate. My son still isn’t on board with giving his older toys to less fortunate children, but I’m working on him. I understand that is a hard thing to convince a child to do.

  • 1 1/2 cups gluten free flour I like cup 4 cup
  • 1 1/2 cups bown sugar
  • 1 cup butter room temp
  • 2 cups gluten free quick cook oats
  • 1 tsp baking soda
  • 1/4 tsp Salt
  • 1 cup chocolate chips
  • 1 cup pecan pieces
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla bean paste can substitute vanilla extract
  • 1 whole egg

Prep Time 5 minutes
Cook Time 10-12 minutes
Passive Time 1 hour

Instructions

  1. Mix dry ingredients (flour, salt, baking soda) and set aside

  2. Cream the room temperature butter and brown sugar until well combined

  3. Add the egg, vanilla, cinnamon, and nutmeg

  4. Combine until smooth

  5. Slowly mix in the flour mixture until completly combined

  6. Fold in the oats, chocolate chips, and nuts by hand

  7. Refrigerate dough covered for 1 hour

  8. Preheat oven to 350 degrees

  9. Using a scooper or tablespoon drop cookie style add cookies to pan lined with parchment

  10. Space each cookie about an inch apart

  11. Bake in 350 degree oven for 10-12 minutes (ovens vary)

  12. Cool on cooling rack and enjoy!
