When one of our readers asked if we had tried making our Crock Pot Easy Cheesy Potato Soup in the Instant Pot, my first thought was, “No, but I’m gonna!” This soup went from easy to quick and easy! If you wanted to take it a step further, you could totally grab a bag of real bacon bits or some of the pre-cooked bacon that you just have to crisp up real quick. I used regular bacon, and it was still super quick and easy. So let’s get cookin’!

It was a little bland for my taste so I added onion powder with the onions and added an 8 ounce block of cream cheese. it was delicious after that!! Will make again.Reply

Can it be frozen? If so, for how long?
To answer previous question, I use canned diced potatoes and still cook for 10 min / 15 min natural release. I don’t saute, pot is still hot enough to melt cheese. I do use a bag, or two of bacon bits. Easy to make and delicious.

Hi Tim!I haven’t tried freezing this soup. I am not sure if the potatoes would turn to mush after freezing and reheating or not. If you give it a try, let me know how it turns out!
